Pineapple & Apple Sponge

I made this tonight as a pudding for after our tea and its just oh sooo goreousssss…

By the time I had remembered to take a picture it was almost gone!   I managed to save some energy too by cooking it at the same time as our main meal was on the go :o)

Here’s the recipe:-

4oz Caster Sugar

4oz Margarine

2 Large Eggs

1 Teaspoon Vanilla Extract

4 oz Self Raising Flour.

1 MacIntosh Red Apple, peeled and sliced

half a tin of pineapple cubes or chunks drained.

Caster Sugar to dust once cooked.

Method:

Cream the margarine and sugar together, until light and fluffy.

Add in the 2 beaten eggs and vanilla essence and mix thoroughly.

Mix in the Self Raising flour.

Place the apples and pineapples in an ovenproof dish, sprinkle with caster sugar and cover with the vanilla cake mixture.

Bake in oven @ 180 degrees C for 40 mins.

Remove from oven and dust with caster sugar.

Serve with Fresh Cream, Clotted Cream or Vanilla Custard or Vanilla Ice Cream.
