Banana, Cranberry & Apricot Loaf

Ingredients:

75g Dried Apricots
75g Dried Cramberries
ZestΒ of 1 Lemon
100g Soft unsalted butter
125g caster sugar
2 large eggs
3 large ripe bananas
200g self raising flour

Preheat oven to 160 degrees C / Gas Mark 3 – bake for 55 mins (or until a skewer comes out clean)

Method:

Chop up the Apricots so the pieces are roughly the same size as the sultanas. Grate the zest of the lemon

Cream the butter and sugar in the mixing bowl, add eggs, and mix well, then add dried fruit and lemon zest, add mashed bananas & flour. Place in a 2lb loaf tin and bake for 55 mins.

  1. Oooooo I’ve just had a slice of this and thought I’d report back… its sooo yummy, the sweetness of the bananas and the apricots then you take a bite and hit a cranberry … a yummy sour edge to it πŸ™‚

    10/10 – I would def make this again πŸ™‚
