When I get home from work tonight i’m going to make another batch of chicken fajita mix… we have run out of the last batch I made.
It is the most easiest thing in the world to make and when I make it, I usually make loads and store it in an airtight kilner jar and just use it as required….
The mix is great because you can use it with chicken, steak, quorn or veggies (if your a vegetarian), also perfect to have around as a storecupboard/pantry essential.
FAJITA MIX
Mix equal quantities of the following ingredients ….
Mild Chilli Powder
Oregano
Paprika
Ground Cumin
Everyone has their own special way of making fajitas, but the way I do it is…
Dice some chicken or steak or whatever you fancy using and place in a plastic bag, add to this a couple of tablespoons of the dry fajita mix (recipe above), hold the top of the bag closed and give it a shake until all the meat/vegetables have am equal coating of the mix.. add more mix if needed.
In a large pan, add a tablespoon of cooking oil, a chopped onion, add sliced red and green peppers, then add the fajita mix covered chicken/steak/veggies and cook for 5 – 7 mins, add a tin of chopped tomatoes and simmer for 5 – 10 mins …
Whilst the above is cooking, grate some cheese and put in a bowl.
Prepare a mixed salad of shredded lettuce, tomatoes, cucumber, spring onions, red pepper, red onion.
Heat the flour tortilla wraps and put some soured cream into a wee dish
Then serve and enjoy :o)
